Graham Cracker Ice Cream Sandwiches

I'm getting all geared up for summer! I love summer! Biking, swimming, walking, flying kites, playing made-up games in our backyard, VBS, sun tanning, garage sales, eating ice cream, drawing with sidewalk chalk, grilling, picnics, parks, county fairs, gardens, camping (well, all but the last one!).
Last night I decided to try out a new recipe for a summer treat. It's a sneaky, healthy treat! AND they were awesome! SOOOOO yummy--you won't believe they're healthy for you! I think the recipe could be adjusted to make different flavors, too, by adding berries or peaches... Give it a try!

Graham Cracker Ice Cream Sandwiches

2 c. lowfat plain yogurt (I used Activia for extra good things!)
1 c. sugar
1 c. lowfat buttermilk (I used 1 c. 1% milk w/ 1 tsp. lemon juice--let it stand for 5 min)
2 T. lemon juice
2 tsp. zest of lemon
Lowfat Graham Crackers (Broken into small squares--FASTCO brand comes in sm. squares)

Whisk together yogurt, sugar, buttermilk, lemon juice, and lemon zest. Cover and freeze for 1 to 1 1/2 hours, until mixture starts to thicken.
To form the sandwiches, scoop out and then press about 1/4 c. of the semifrozen yogurt mixture between 2 graham cracker squares. Wrap each one in cling wrap and freeze until firm.
