I love our little ABF group at Willow Creek! They really are the best kids around! Last night we had a super fun little cook-out in Ankeny at a lovely home! What I really liked was how much all the fun wore out the boys--they slept until 11:30 today! Woo-hoo! I think that's a new record!
I found this recipe for Pound Cake in my good ol' Betty Crocker Cookbook. Usually, I'm not a fan of store-bought pound cake, but this homemade version "takes the cake"....literally! It's the best with fresh strawberries and a dollup of whipped cream!
Pound Cake
1 c. butter
4 eggs
2 c. flour
2 tsp. baking powder
1/4 tsp. salt
1/2 tsp. nutmeg
1 c. sugar
1 1/2 tsp. vanilla
Bring butter and eggs to room temperature. Grease and flour a 9x5x3-inch loaf pan. Stir together flour, baking powder, salt, and nutmeg. In a large mixer bowl beat the butter on medium speed for 30 seconds. Gradually add sugar, beating 6 minutes or until fluffy. Add vanilla. Add the eggs, one at a time, beating 1 minute after each; scrape bowl frequently. Gradually add dry ingredients to egg mixture, beating on low speed just until thoroughly combined. Pour batter into pan. Bake at 325 degrees for 55-65 minutes. Cool 15 minutes on a wire rack and remove from pan. Cool.
