On hot days, I love to throw together a pasta salad loaded with vegetables and served cold. I usually just use a random kind of salad dressing, but I found this recipe for a fresh tasting spin on one of our favorites!
Pasta and Vegetable Salad
1/2 c. olive oil
1/2 c. balsamic vinegar
2 T. lemon juice
1 T. dijon mustard
1 T. honey
1 garlic clove, minced
dash of salt
1/2 c. fresh basil leaves
1 box whole wheat pasta, cooked al dente
any vegetables you have on hand--we used broccoli, carrots, tomatoes and I threw in some diced turkey ham and yummy dill cheese.
Mix all dressing ingredients, except basil. Toss with pasta and vegetables. Add basil just before serving.
THIS is also a really cool thing I think I'll be doing soon with the kids!
