What's the verdict?

Last weekend, I flew solo with the kids
while Cody was away.
We ventured out to a lovely little parade in Waukee.
The weather was *perfect*!
The firemen were very *friendly*!
And the candy was *oober* plentiful!

I don't even want to think about how many grams of sugar my children consumed!
I was totally in survival mode after a short night's sleep, and their cute little grins and giggles just melted my willpower.
Plus, you have to admit, that's one pretty enticing candy jar.

Today, I thought I should begin the quest to bring them down from their endless sugar highs.
Heart healthy muffins seemed the right way to go. Of course, as I began digging for recipes and supplies, I realized I was out of almost *everything*.
Yes, that's my motto in the kitchen...I never have the right things on hand. So, I adapted.
Now, here's my questions...look at this recipe.
Do you think it counts as a healthy recipe?
I'll have to admit, they taste *out*of*this*world*!
I'm just not sure...you'll see.
Here they are:
ABC Muffins
(Applesauce, Bran, Cake mix)

3 eggs
1 cup applesauce (homemade, non sweetened)
1/2 c. shredded zucchini
1/4 c. honey
1 package vanilla cake mix
1 1/2 c. wheat bran
dash of nutmeg, cloves, vanilla

Beat eggs, applesauce, zucchini and honey together. Add dry ingredients and mix until blended. Fill greased or lined muffin cups 2/3 full. Sprinkle with a little organic sugar. Bake at 350 degrees for 15-17 minutes.

So, do these count as a healthy option...or not?

I think they sound healthy! A little cake mix never hurt anyone. :) I'm sure there's healthier (and not as yummy), but I'm sure there's WAY more that are un-healthier.
Your kids are probably the best and healthiest kids fed kids in the metro!

I bet that cake mix makes them taste amazing! I may have to try them....

***I'm sure you realize that I am not the picture of healthy eating*** I think it seems pretty healthy at least you didn't use any oil. Applesauce and zucchini, bran and honey are all good for you! If it tastes good too that's awesome! I think you did great:) Especially running with no daddy for those few days!
