Two days until pay day = empty cupboards = creativity in the kitchen!

Tonight's menu: Beef and Noodles

Whole Wheat Noodles
(Not really trying to be sneaky here, just the only flour left in the house!)

1 beaten egg
2 T. milk
1/2 tsp. salt
1 c. whole wheat flour (or whatever flour have in the house!)

In a mixing bowl, combine egg, milk, and salt. Stir in enough of the flour to make a stiff dough. Cover and let rest for 10 minutes. (This is so you can load up on chocolate...cooking takes energy!)
On a well-floured surface roll dough in a large rectangle. Let set for twenty minutes. Cut with a noodle cutter or roll dough and use scissors to cut strips. Separate noodles and let dry for two hours.For Soup:
Any cut of beef--use the cheapest because it cooks so long it will be tender
Beef broth, stock or bullion
Minced Garlic and Onion
Salt and Pepper

Place meat in pan or crock pot. Cover generously with water. Add broth or bullion. Add minced garlic and onion to taste. Simmer on low for three to four hours. Break meat apart into bite size pieces.
Drop noodles into boiling soup. Cook, uncovered, for 5-10 minutes, until done.

sounds like us this week! im bound and determined starting this month not to run to the store every other day to buy something for a meal, so if i forgot it on our weekly shopping trip then i have to be creative!

Sometime in my life I would love to write a cookbook based on the "creative" meals prepared when money is tight and cupboards are bare. :)

That sounds gooood! And I'm totally going to whip up a batch of those pancakes. They were so hearty and yummy!
It's so fun making meals out of what you have on hand. A lot of times I'll google the most random ingredients and usually find some sort of recipe. Today I googled garbanzo beans and red peppers. Could be interesting. :)
