Summer's Last Hurrah

I've got to admit...

I'm not fully on board with the changing of seasons.

Yes, I know...I can do nothing to stop this change.

But I can celebrate and cling to every . last . minute of summer.

And I am.

At least in the kitchen.

Summer Cucumber and Dill Salad
(adapted from Whole Foods Recipes)

3-5 medium cucumbers, thinly sliced
1/4 teaspoon sea salt, more to taste
2 tablespoons white or red wine vinegar
1 tablespoon finely chopped fresh (or 1 teaspoon dried) dill

Mix salt, vinegar and dill.  Toss with cucumber.
Taste test to see if more salt is needed.
Try to refrain from eating the whole bowl before the family comes to the table for dinner.
So yummy!!!

Grilled Chicken Moroccan Style
(adapted from

1/2 cup olive oil
1/4 cup red wine vinegar
2 tablespoons ground cumin
1 tablespoons ground coriander
1/2 teaspoon ground cinnamon
1 teaspoons salt
1/4 teaspoon cayenne pepper
8 chicken legs

Whisk first 8 ingredients in large glass baking dish. Add chicken; turn to coat. Cover with plastic wrap; chill 4 to 6 hours.
Prepare bbq (medium heat). Place marinade-coated chicken on bbq. Grill chicken until just cooked through, occasionally brushing with any remaining marinade, about 12 minutes per side for legs. Transfer chicken to platter.
 (Do you notice that there are nine legs?  That completely creeps me out...some poor chicken out there running around with just one leg thinking, "I got away! I got away!"  I know, I need help... 
I should probably be a vegetarian!)
These were a hit!
I think we've got some big carnivores on our hands!

Fruit Salad with Poppy Seed Dressing
(adapted from Whole Foods Recipes)
 2 to 3 tablespoons fresh citrus juice (we LOVE lime!)
1 to 2 tablespoons honey
1 to 2 teaspoons poppy seeds
Pinch of ground cinnamon
Pinch of ground ginger

Mix dressing ingredients and pour over any fruit you like!  
We had it on peaches and nectarines here.  Yum!

Oh girl, I am so glad someone likes summer...because I am ready to kick to the curb. Bring on FALL! :)

Honestly there isn't one thing I'm clinging too...I'm actually a little bummed it's going to be so warm today. I've loved the cooler temps and JEANS!
I really think after you make your first apple-treat of the season in the oven you'll be ready for fall. Right??

Oh, I'm so with you! I'm clinging to summer myself this year! And we've been getting as much use out of our grill as we possibly can -- I've got some recipes I should share too -- and now you've given me a few more to try before it's officially fall too -- those look deliciso! :)

We made guacamole burgers yesterday with melted pepper jack cheese and then globbed the green goodness on there! Our fave summer treat! I'm a fall girl myself - but, I do enjoy grilling...that chicken looks amazing. And, I'm like you... I have to try REALLY hard to not think about those chickens :)
